Let the spring soirées begin!

What are you preparing for your early spring soirées? If you ask us, it's got to be a plate of pesto perfection, of course. ⁠We've enlisted the advice of our good friend, @zestestudio, to create the recipe of the season. A fuss-free delicacy, enhanced by our Line Collection in Spearmint... the final touch to complete even the most arduous of spring cleans.

PESTO PERFECTION

Prep time: 15 mins

Serves: 2

 

Ingredients:

  • 3 garlic cloves
  • Generous handful of fresh basil
  • 1 tsp dried basil
  • 3 tbsp pine nuts
  • 1/2 cup olive oil
  • 2 tbsp grated parmesan
  • Salt & pepper to taste
  • 180g linguine pasta (uncooked)

 

Method:

  1. Place the basil (both fresh & dried) in a food processor or use hand blender, along with the garlic, parmesan, olive oil and 2 of tbsp of the pine nuts. Blend to a sauce-like consistency and season with a little salt & pepper to taste
  2. Boil the pasta according to pack instructions
  3. While the pasta cooks, place the remaining tbsp of pine nuts into a small frying pan and heat on high (without oil). Cook until golden brown, but keep an eye on them as they can burn very quickly, so give the pan a good shake now and then. Take off the heat and place the nuts in a small bowl so they don’t burn
  4. When the pasta is cooked, drain and put the same pan you cooked the pasta in back on a medium heat and pour in your pesto sauce. Heat slightly for 1-2mins and then mix in the pasta. Give it a good stir, until it’s fully coated
  5. Serve immediately and garnish with the roasted pine nuts and a sprinkle of parmesan
